Packed with protein, this Catalan-style white beans and sausages recipe will become a new family favourite.

Tip: If you can’t get hold of a jar of Spanish beans, use cannellini or haricot/navy as an alternative.

Preheat the oven to 180°C/fan 160°C/gas mark 4. Heat 2 tbsp of oil in a large frying pan over a medium-high heat. Add the sausages and fry, turning regularly, for 10 minutes until brown all over. Transfer to a roasting tin and place in the oven for 5-10 minutes, or until cooked through.
Meanwhile, add the remaining 2 tbsp of oil to the pan and lower the heat to medium. Add the garlic and fry for 1-2 minutes until golden and fragrant. Add the jar of beans and their liquid and stir together. Cook gently over the heat for 3-4 minutes.
Taste the beans, and add salt, pepper and a squeeze of lemon juice if it needs it. Stir through the parsley and serve the beans with the sausages. Some wilted or steamed greens go nicely alongside.
